This pad Thai recipe is so quick & easy, it’s ideal for a midweek meal! Add as much or as little chilli as you like, and kids will also love its milder version.

Cook noodles according to their packet directions. Drain and cover to keep warm.                            Â
Heat a lightly oiled, large wok over a high heat. Add pork in two batches. Stir-fry 
for about 3 to 4 minutes, or until just cooked. Remove.
Add 2 tsps of oil to same 
hot wok. Pour in eggs. Cook, gently stirring, for 1 minute, 
or until scrambled. Return 
pork to wok with noodles and sauce. Stir-fry until combined and hot. Stir in onions.
Serve with lime. Garnish with coriander, chillies and sprouts.                            Â
